Warm Halloumi & Pesto Salad

Ingredients
2 large sweet potatoes
2 small red onions
90g pesto
2 garlic cloves
½ teaspoon of salt
2 tbsp olive oil
1 red pepper cut into chunks
1 orange pepper cut into chunks
280g cherry tomatoes
350g halloumi cheese cubed
Fresh basil to garnish

Method
Preheat the oven to 180c.
In a small bowl combine the pesto, garlic, salt and olive oil.
Scatter the sweet potato and red onion chunks onto a large baking tray and cover in half of the pesto mixture.
Roast in the oven for 15 minutes.
Next add the pepper chunks, cherry tomatoes, and cubed halloumi. Add the rest of the pesto mixture and combine well.
Place back in the oven for 20 minutes and serve with fresh basil.
