Cod Papillote

healthy cod papillote recipe

Serves 2

Ingredients

Foil or baking paper (enough to wrap fish and vegetables in)
1 leek, chopped
2 carrots, chunked
A bundle of asparagus, ends removed
2 cloves garlic, sliced
Salt and pepper
Drizzle of olive oil
Splash of white wine vinegar or white wine if you would prefer
2 portions of filleted white fish (we’ve gone for cod)

Method

Place all chopped vegetables and garlic in the centre of your baking paper/ foil. 

Position fillets of fish on top of vegetables.

Drizzle over olive oil and white wine/vinegar. 

Place another sheet of brown paper or foil over the top of the fish and vegetables and fold at the sides creating a parcel. 

Oven cook for as long as the fish instructions state. This will vary depending on the type of fish you use. 

To serve, cut/tear open the top of the bag and allow the steam to escape before tucking in!
