Blueberry Pancakes

Ingredients
2 ripe bananas
2 scoops of vanilla protein
2 eggs
50g of oats (blended into a flour consistency)
Coconut oil for cooking
1 tbsp greek yoghurt to serve
Maple syrup or honey to serve
A handful of blueberries (you can use frozen here, but make sure that you defrost first!)

Method
Blend the dry oats into a flour like consistency.
Add the bananas, vanilla protein, eggs and oat flour and whizz it up. If you have a nutribullet/blender then pop it all in there!
Feel free to add some blueberries directly into the mixture, or save them for a sweet topping.
Put half a teaspoon of coconut oil in a pan (on a low heat) and wipe it round with a kitchen towel.
Pour in little puddles of pancake mixture to the size you wish. I find that I get better at this the further in the batch I get!
Cook for approximately 1 minute on each side - they cook super fast!
Remove and repeat the process with the rest of the batter.

Serve with greek yoghurt, blueberries and maple syrup/honey.
