Niçoise Salad
Serves 4
Ingredients
1 tin of tuna
1 egg
½ a lettuce head (you can never have too much lettuce!)
4 baby potatoes
½ a clove of crushed garlic
60g green beans
1 tomato
2 eggs
1 tsp dijon mustard
1 lemon, juiced
8 pitted olives
2 tbsp olive oil

Method
Shake the dijon mustard, lemon, olive oil and garlic in a jar for the dressing.
Boil baby potatoes until tender. Once cooked, drain and leave to cool fully. Slice into halves.
Boil the egg to your liking (6 mins soft, 8 mins medium, 10 hard).
Boil green beans until tender or done to your liking. Drain and refresh under cold running water to quickly cool. Drain, pat well to dry.
Arrange the salad leaves on the plate and then scatter and layer the remaining ingredients on top. Finish with the egg, tuna and olives. Drizzle with dressing and serve.
